10-oz pkg, frozen, chopped spinach thawed and drained
6-oz pkg. herb flavored stuffing mix
5 eggs, beaten
1 onion, chopped
½ C butter, melted
¼ tsp. garlic powder
½ C tsp pepper
¼ tsp. dried thyme
- In a bowl, mix all ingredients well. Form into 1 to ½ inch balls. Place in an ungreased baking sheet; freeze for at least 30 minutes until firm.
- Remove from freezer and place on well-greased baking sheet.
- Bake, uncovered, at 375 degrees for 25 minutes, or until lightly golden brown.
- Spinach balls may be stored in plastic freezer bags for up to one month; bake at serving time.
- Makes 15 – 20 servings.
