Zucchini Bread

Ingredients

Beat together:
3 eggs
1 C oil
2 C sugar
2 C grated zucchini including peel

Add:
2 C flour
1/4 tsp. nutmeg
2 tsp. vanilla
1 tsp salt
1 C chopped nuts
1/4 tsp. baking powder
3 tsp cinnamon

Pour into 2 greased and floured loaf pans. Bake @ 350 for 1 hour.
