Turkey or Chicken Casserole

2 C chicken or turkey
1 C celery, chopped
1 Tbsp. chopped onion
1 can cream of mushroom coup
1/2 C slivered almonds
1/2 C water
2 C cooked rice
1 tsp. lemon juice
1/2 tsp. salt
1/2 tsp. pepper
1/2 C mayonnaise
3 hard boiled eggs, chopped
1 can fried onion rings

1. Preheat oven to 350 degrees. Grease a 9×13 pan.
2. Mix all ingredients except fried onion rings.
3. Cover and bake for 30 minutes.
4. Uncover and top with onion rings, then bake an additional 5 minutes. Serves 8.
