Gooey Chocolate Cake

Ingredients
1 box German Chocolate Cake Mix with pudding in it
1 16 oz. jar butterscotch topping
1 can sweetened condensed milk
1 – 8 oz. container whipped topping
4 regular size Heath Bars, crushed

Direction
1. Prepare cake mix as directed on box for 9×13 pan. Bake and let cool 10-15 minutes. Poke holes evenly over entire cake with the handle of a wooden spoon.
2. Combine butterscotch topping and condensed milk. Spread over cake.
3. Refrigerate cake until completely cool. Finish by icing with the whipped topping then sprinkle with crushed candy bars.

Ranger Joe Cookies

Ingredients
1/2 C butter
1/2 C sugar
1/2 C brown sugar
1 egg
1 C all purpose flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. vanilla extract
1 C rolled oats
1 C crispy type cereal
1/2 C peanut butter

Directions
1. Preheat oven to 350 degrees.
2. Mix butter, sugars and egg until smooth and creamy.
3. Sift the flour, baking soda and baking powder. Add this to the egg mixture. Stir in vanilla, oatmeal, rice cereal and peanut butter. Mix until well combined
4. Drop by heaping teaspoons onto ungreased baking sheet. Bake for 10-12 minutes or until lightly browned around the edges.

Berry Crumb Bars

Ingredients
1 C sugar
1 tsp. baking powder
3 C flour
1 C shortening
1 egg
pinch of salt
4 C raspberries
1/2 C sugar
3 tsp. cornstarch

Directions
1. Preheat oven to 375 degrees. Grease a 9×13 pan.
2. Combine first 7 ingredients. The dough will be crumbly. Pat half the dough into the prepared pan.
3. Combine sugar, raspberries and cornstarch together and pour over the dough in the pan. Crumble the remaining dough over the top of the berries.
4. Bake for 45 minutes or until top is slightly browned.

Pumpkin Squares

Ingredients
4 eggs
1 C salad oil
2 C sugar
1 C pumpkin
2 C flour
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 C nuts

Directions
1. Preheat oven to 350 degrees. Grease and flour a jelly roll plan.
2. Mix together, eggs, oil and sugar; mix well then add pumpkin.
3. Mix all dry ingredients together, then add to pumpkin mixture. Add nuts and stir well.
4. Spread into prepared pan. Bake for 20-25 minutes. Frost when cool with icing below

Frosting
Blend together
3 oz. cream cheese
6 Tbsp. butter, softened
2 1/4 – 2 1/2 C powdered sugar
1 tsp. milk (or more to get consistency)
Spread on cooled bars

Brownies

Ingredients
1/3 C butter
2 squares unsweetened chocolate
2 eggs
1 C sugar
1 tsp. vanilla
2/3 C flour
1/4 tsp. salt
1/2 tsp. baking powder

Directions
1. Preheat oven to 350 degrees. Grease an 8×8 pan.
2. Melt butter and chocolate. In a separate bowl, mix together eggs, sugar and vanilla.
3. In 3rd bowl, whisk together flour, salt and baking powder. Add four mixture to egg mixture. Add chocolate mixture to rest of ingredients.
4. Spread into prepared pan and bake for 15-20 minutes.

Frosted Zucchini Bars

Ingredients
3 eggs
2 C sugar
1 C vegetable oil
2 1/4 C flour
1 tsp. cinnamon
1 1/2 tsp. baking soda
3/4 tsp. baking powder
dash of salt
3 tsp. vanilla
2 C grated zucchini
3/4 C chocolate chip or raisins
1 C chopped nuts

Directions
1. Preheat oven to 350 degrees. Grease a jelly roll pan.
2. Beat eggs well, add sugar then oil.
3. Whisk together flour, cinnamon, baking soda, baking powder and salt.
4. Add eggs to flour mixture. Stir in vanilla, zucchini, chocolate chips or raisins and nuts.
5. Spread into prepared pan. Bake for 20-25 minutes. When cool, ice with frosting.

Frosting
Blend together:
1 stick oleo
3 oz. cream cheese
1 tsp. vanilla
2 1/2 C confectioners sugar

Mincemeat Bars

Ingredients
1 1/2 C sugar
2 Tbsp. oleo
3 eggs, separated
1/4 C milk2.
1 3/4 C flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 C mincemeat
1 C chopped dates
1 C nuts

Directions
1. Preheat oven to 350 degrees. Grease an 8×8 pan.
2. Combine everything EXCEPT egg whites.
3. Whip egg whites until soft peaks form. Fold into mincemeat mixture.
4. Pour into prepared pan and bake for 20-30 minutes


Mexican Wedding Cakes 2

Ingredients
2/3 C powdered sugar
2 sticks butter
1/8 tsp. vanilla
2 C flour
1/2 tsp. salt
1 C chopped pecans
Extra powdered sugar for after baking

Directions
1. Preheat oven to 350 degrees.
2. Mix everything together except pecans and extra powdered sugar
3. Knead mixture well. Add pecans then roll into small balls.
4. Bake for 10-12 minutes. Roll in extra powdered sugar while still warm.
