Hamburger Casserole

Ingredients
1 lb. hamburger
salt, pepper and garlic salt to taste
1 medium onion
1 small pepper
4 slices American cheese
1 box tater tots
1 can cream of mushroom soup

Directions
1. Preheat oven to 350 degrees.
2. Mix salt, pepper and garlic salt with hamburger. Spread mixture into bottom of a 8×8 pan.
3. Lay cheese slices on top of beef. Slice onion and pepper thinly and lay on top of cheese.
4. Spread soup out like frosting on nest, then press tater tots into soup. Lightly salt and pepper again.
5. Cover with foil and bake for 1 hour.

Bread Bowl Chili

Ingredients
1 large round loaf of bread
1 medium jalapeno pepper, diced
12 oz. ground beef
2 tsp. olive oil
2 medium yellow onions, chopped – about 2 cups
1 medium green bell pepper, chopped – about 1 cup
1 Tbs. chili powder
1 can (14.5 oz.) whole tomatoes
1/4 C no salt added tomato paste
1 can (8.5 oz.) red kidney beans, drained and rinsed
1 can (7 oz.) whole kernel corn, drained

Directions
1. For the bread bowl use a serrated knife to slice off about and inch from the top of the bread bowl. Carve out a “bowl” from within the bread, leave about an inch all around the inside.
2. For the chili: use a fork and knife to cut the jalapeno ( I don’t think I need to tell you about the pain involved when you touch your eyes with hands that have touched a hot pepper).
3. In a large non-stick skillet, cook beef over medium heat, stirring until browned – about 5 minutes. Drain any fat and remove beef from skillet and set aside.
4. In same skillet, heat oil over medium heat. Add onion; cook, stirring for 5 minutes. Add both peppers and chili powder; cook, stirring for 5 minutes.
5. Add beef, tomatoes and tomato paste; bring to boil.
6. Reduce heat to low and simmer for 25 minutes. Add beans and corn. Cook for an additional 5 minutes
7. Ladle chili into bread bowl and serve immediately.

Porcupine Meatballs

Ingredients
1 can (10 1/2 oz.)
1 C water
1 C Minute Rice
1 egg, slightly beaten
2 tsp. grated onion
1 tsp. salt
1/8th tsp. marjoram (optional)
1 lb. ground beef

Directions
1. Mix soup and water.
2. Combine remaining ingredients and 1/2 C of the soup mixture.
3. Shape mixture into 18 balls and place in skillet. Pour remaining soup mixture over meatballs and bring to a boil.
4. Cover and simmer 15 minutes, basting meatballs occasionally.

Hamburger Pie

Ingredients
1 lb. ground beef
1 tsp. salt
1/8 tsp pepper
1 Tbsp. minced onions
Potato Buds instant potatoes (10-12 servings made as directions say.)
American or Velveeta cheese slices

Directions
1. Preheat oven to 350 degrees
2. Combine beef, onion, salt and pepper; brown and drain off fat.
3. Pour mixture into a 9×13 baking pan. Spread potatoes over meat then cheese slices over potatoes.
4. Bake until cheese melts.

note: you may add cream of mushroom soup to the meat mixture if you want

Salisbury Steak

Ingredients
1 1/2 lbs. ground beef
1 C dried breadcrumbs
1/4 C onion, chopped
1/2 C celery, chopped
1/2 C green pepper, chopped (optional)
1 tsp. salt
1/4 tsp. pepper
1 can Cream of Mushroom soup or 2 packs brown gravy mix.

Directions
1. Preheat oven to 350 degrees.
2. Mix ground beef, breadcrumbs, onion, celery green pepper, salt and pepper. Form into patties and brown in oil in large skillet.
3. Place patties in a baking dish and cover with undiluted mushroom soup or brown gravy mix, mixed together according to directions.
4. Cover and bake for 45-60 minutes or until no longer pink.

Cheeseburger Pie

Ingredients
1 unbaked pie shell
1/2 lb. ground beef
1/3 C chopped onion
1/2 C mayo or Miracle Whip
1/ C milk
2 eggs
1 Tbs. cornstarch
1 / C cubed Velveeta

Directions
1. Preheat oven to 350 degrees.
2. Brown ground beef and onion together; drain.
3. In a bowl. mix together mayo, milk, eggs, cornstarch and cheese, add meat and onion.
4. Pour mixture into unbaked pie shell and bake for 35-40 minutes.

BBQ Beef or Sloppy Joes

Ingredients
2 lbs. ground beef
1/2 tsp. salt
1 lg. onion, finely chopped
16 oz. catsup
1 Tbs. mustard
1/2 C water
1/4 tsp. paprika
1 Tbs. vinegar
4 Tbsp. sugar
1 tsp. salt

Directions
1. In a medium skillet, brown the hamburger with the onion and salt.
2. Mix together the remaining ingredients and pour over hamburger mixture and simmer for 15 minutes or until ready to serve.

Barbequed Meatballs

Ingredients – Meatballs
1 pound ground beef
3/4 C evaporated milk
1 pkg. onion soup mix
2 Tbsp. worcestershire sauce

Directions – meatballs
1. Preheat oven to 400 degrees.
2. Mix all ingredients together and let set for 5 minutes.
3. Shape into medium sized balls and bake for 10 minutes.

Ingredients – sauce
2 C catsup
1 C brown sugar
1 Tbsp. worcestershire sauce
2 Tbsp. water
2 Tbsp. vinegar
2 Tbsp. relish

Directions – sauce
1. Mix all ingredients together in a large sauce pan and let simmer for 15 minutes.
2. Add meatballs to sauce and serve.


Beef Stroganoff 3

Ingredients
1 pound lean beef (top round, tenderloin or butt)
1/4 pound butter or margarine, divided
1/2 C catsup
1/2 pint sour cream
1 medium onion, diced
1 small can mushroom stem and pieces
salt and pepper

Directions
1. Cut meat into strips across the grain. This is most important!
2. In 1/2 the butter or margarine, in a large skillet, cook the meat strips until no longer pink. In a separate skillet, in remaining butter or margarine, saute onion and mushrooms until tender.
3. Add onions and mushrooms to meat and stir together.
4. In a small bowl, combine catsup and sour cream until mixed together well. Add mixture to meat and let simmer 10-20 minutes. Salt and pepper to taste. Serve over rice or noodles.
