Gooseberry Pie

Ingredients
2 crust pie crust
1/3 C water
2 C sugar
1 quart gooseberries, cleaned
1/4 C cornstarch
1/2 C water
1 Tbs. butter

Directions
1. Preheat oven to 425 degrees
2. In a medium saucepan, combine 1/3 C water and sugar, cook for -3 min. Add gooseberries and simmer gently for 5 minutes. Then strain.
3. In a saucepan combine cornstarch, and 1/2 C water. Cook stirring constantly until thick and clear add butter and berries. Pour into pie crust and top with second crust.
4. Bake at 425 for 15 minutes. Reduce heat to 350 degrees and bake for an additional 30 minutes

Old Fashioned Pie Crust

Ingredients
3 C flour
1 tsp. salt
1 C lard or shortening
1 egg
1 tsp. vinegar
1/4 C water

Directions
1. Whisk together flour and salt. Cut in the lard until the mixture resembles coarse meal.
2. Combine egg, vinegar and water, mixing well.
3. Make a well in the flour mix and pour water mixture into the well. Combine until a ball forms. Divide into 2 equal pieces.
4. Put flour onto surface and roll each piece of dough separately into the desired size. Use as little flour as possible, too much flour will make the crust tough.

Taco on a Plate Dip

Ingredients
1 pound ground beef
1 small onion, chopped
1 pkg. taco seasoning
8 oz. sour cream
1 (12 oz.) bottle taco sauce
16 oz. grated sharp cheddar cheese
2 1/2 C shredded lettuce
3-4 tomatoes, deseeded and chopped

Directions
1. Cook beef, onion and taco seasoning until beef is no longer pink. Drain and cool.
2. In a 9″ square pan, layer sour cream, taco sauce, ground beef mixture, cheddar cheese, lettuce and cheese.
3. Serve with tortilla chips.

Dorothy’s I Hate to Wash Dishes Cake

I have to confess, I’m not a fan of this cake. However, I don’t care for Gooey Butter Cake either and I’m definitely in the minority with that opinion, because everyone else love Gooey Butter Cake. So, you’ll have to make them and decide for yourself.

Ingredients
1 – 20 oz. can crushed pineapple
1 – 20 oz. can cherry pie filling
1 box white cake mix
1/2 C chopped nuts, optional
1 stick butter

Directions
1. Preheat oven to 350 degrees.
2. Dump pineapple and pie filling into a 10″ pan and stir to combine.
3. Spread dry cake mix evenly over the top of fruit mixture.
4. Slice butter thinly and place slices over the top of cake mix.
5. Bake for 30-40 min or until the top is browned.

Autumn Bread Pudding

Ingredients

2 Tbsp. butter
1 light brown sugar packed
1 1/2 C water
2 Tbsp. light corn syrup
1 cinnamon stick, 3″
3 cloves, whole
2-3 dinner rolls, cubed and toasted
1 firm banana, sliced
1 medium apple, peeled, cored and sliced
1/2 C raisins
1/4 C sliced almonds

Directions
1. Preheat oven to 350 degrees. Grease a 1 quart shallow baking dish with butter.
2. In a medium saucepan combine, brown sugar, water, corn syrup, cinnamon stick and cloves. Bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer for 8-10 minutes. Remove heat and cool slightly.
3. In baking dish, layer ingredients in the order of bread, bananas, apples, and
almonds.
4. Strain the syrup to remove cloves and cinnamon stick and cloves. Slowly pour syrup bread and fruit mixture to moisten bread well. Reserve some syrup to use at serving.
5. Cover and bake for 20-25 minutes or until apples are tender. Remove covering and bake an additional 10-15 minutes, until pudding top is crisp and golden. Serve with warm syrup and whip cream if desired.

Chocolate Mayonnaise Cake

Ingredients
2 C flour
1 C sugar
2 tsp baking soda
1/2 C cocoa powder
1 tsp vanilla
1 C mayonnaise
1 C water, lukewarm

Directions
1. Preheat oven to 350 degrees. Grease and flour a 9×13 baking dish.
2 Whisk together the dry ingredients.
3. In a large bowl, combine vanilla, mayonnaise and water. Add the dry ingredients to the wet and mix well.
4. Pour into prepared baking dish. Bake for about 30 minutes.

Chocolate Ganache Frosting or use you favorite frosting.

Miracle Whip Cake

Ingredients

1 C Miracle Whip
1 C sugar
1 C water
2 1/2 C flour
2 tsp soda
2 Tbsp cocoa, heaping

Directions
1. Preheat oven to 350 degrees, grease and flour 2 – 8″ round cake pans.
2. Combine Miracle Whip, sugar and water, mixing well.
3. Whisk dry ingredients together then beat into wet mixture.
4. Pour evenly into prepared pans and bake for 33-35 mins.

Chocolate Ganache Frosting

This is a really simple but fantastic frosting, I am one of those people who does not like frosting, but I do enjoy this one. You can use any type of chocolate, but semi-sweet or bittersweet are the best. You can use white chocolate and it will taste great, but it may affect the texture a little as white chocolate is not really chocolate, it’s a confectionary. You can use chips or baking bar chocolate, if using bars, make sure to chop them so they melt better.

Ingredients
12 oz. chocolate
2 Tbsp. butter
1 1/4 C heavy cream

Directions
1. Put chocolate and butter into a large bowl.
2. Heat the heavy cream in the microwave until almost boiling. (I do this in the microwave because I ALWAYS scorch it if I do it on the stove. If you prefer heating the cream on the stove, go right ahead!)
3. Pour the heated cream over the chocolate and butter. Allow to sit for 5 minutes without stirring.
4. Beat until smooth and shiny.
5. Let cool to room temperature. At least one hour, but can sit longer.
6. Whip ganache until until light and fluffy.

Beef and Macaroni Casserole

Ingredients

1 pound macaroni, cooked according to pkg directions
1 pound hamburger, cooked
1 lg. onion, chopped
4 hard boiled eggs, sliced
4 oz. pimentos, chopped
2 cans mushroom soup
2 cans milk
8 oz. cheddar cheese, shredded

Directions
1. Preheat oven to 350 degrees.
2. Combine soup and milk, set aside. In a 9×13 pan place the ingredients in layers as follows. Macaroni, hamburger, onion, eggs, pimentos, soup mixture and cheese.
3. Bake at 350 degrees for 1 hour.
