Zippy Chicken Stir Fry

Ingredients
1/2 C mayo
1 Tbsp. soy sauce
1/2 tsp ground ginger
2 Tbsp. oil
3 chicken breast, cubed
2 packages California blend vegetables
1 garlic clove, minced
4 C hot cooked rice

Directions
1. Stir together mayo, soy sauce and ginger; set aside.
2.Heat oil in wok or skillet over medium heat. Add chicken and cook for 4 minutes or until done. Add vegetables and garlic and cook for another 3-4 minutes or until vegetables are crisp/tender. Stir in mayo mixture and simmer for 30 seconds.
3. Serve with rice.

Chicken Casserole

Ingredients
1 pkg. California blend vegetables
2 cans cream of celery soup
1 C mayonnaise
1 tsp. lemon juice
2 C cooked chicken
1 C grated cheese
1 C water chestnuts
1/2 C melted margarine
2 tsp. parsley flakes
2 C crushed cornflakes

Directions
1. Preheat oven to 350 degrees.
2. Cook vegetables.
3.Blend soups, mayonnaise and lemon juice together. Stir in chicken, cooked vegetables and water chestnuts.
4. Spread in a 9×13 pan. Mix together parsley and cheese together and sprinkle on top. Mix melted margarine and corn flakes together and spread on top of
casserole.
5. Bake for 45 minutes.

note: you can substitute 1 can of soup with 1 C of sour cream for a slightly different take on the casserole.

Chicken and Green Bean Alfredo

Ingredients
6 oz. box fettuccine noodles
1 1/4 C alfredo sauce
2 (14 oz.) cans green beans, drained
1 1/4 C cooked chicken strips
2 Tbsp. grated parmesan cheese

Directions
1. Cook pasta according to package directions; drain. Return to pan.
2. Meanwhile, heat sauce, green beans and chicken in a saucepan, stirring occasionally.
3. Toss well with hot pasta. Transfer to a serving dish and sprinkle with parmesan cheese.

Creamy Chicken Divan

Ingredients
1 pkg. Velveeta Shells and Cheese Dinner
2 Tbsp. margarine
1/4 C Miracle Whip
2 Tbsp. flour
1/4 tsp. salt
3/4 C milk
1 (10 oz.) pkg. frozen broccoli speared, thawed and drained
2 boneless, skinless chicken breast cooked and sliced
2 Tbsp. grated parmesan cheese

Directions
1. Prepare dinner as directed on box. Grease a 2 quart baking dish.
2. Preheat oven to 350 degrees.
3. Melt margarine in saucepan, In small bowl, blend together Miracle Whip, flour and salt. Add mixture to margarine and then gradually add milk. Cook until thickened, stirring constantly.
4. Layer dinner mixture, broccoli spears and chicken in a greased baking dish. Then top with sauce and sprinkle with parmesan cheese
5. Bake for 35-40 minutes.

Ayres Barbeque Sandwich

Ingredients
1 lb. ground beef
1 medium onion, chopped
2 Tbsp. sugar
1 Tbsp. vinegar
3/4 C catsup
1 green pepper, chopped
1/4-1/2 tsp. dry mustard
1 Tbsp. salt
4 hamburger buns

Directions
1. Brown meat until crumbly.
2. Combine remaining ingredients and stir into meat.
3. Cover and simmer slowly for 30 minutes, stirring occasionally.
4. Serve on buttered buns, toasted under broiler.

Swiss Steak

Ingredients
3 lb. round steak, about 3″ thick
salt
pepper
flour

Directions
1. Preheat oven to 325 degrees,
2. Pound salt and pepper into both sides of meat with meat mallet. Then pound flour into both
3. In large oven safe skillet in hot vegetable or olive oil until very brown.
4. Cover with water just to the top of meat.
5. Cook just until tender.

Stuffed Green Peppers

Ingredients
1/2 lb. ground beef
1 C Cracker crumbs
1 tsp. salt
1/2 tsp. pepper
1 Tbsp. onion, chopped fine
1/2 can tomato soup
4 green pepper

Directions
1. Preheat oven to 350 degrees.
2. Cut the top off peppers and remove membranes and seeds. Set aside.
3. Mix together beef, cracker crumbs, salt pepper and 1/2 of the tomato soup.
4. Fill peppers with mixture. Combine remaining soup with 1/2 C of water and pour over top of peppers. Cover with foil.
5. Bake covered for 45 minutes and uncovered and 15 uncovered.

Meatball and Cheese Baked Ravioli

Ingredients
1 can Hunts garlic and herb spaghetti sauce
16 oz. frozen cooked meatballs, each quartered
1 – 24 oz. frozen cheese filled ravioli, cooked according to directions and kept warm
non-stick cooking spray
1 C shredded mozzarella
Fresh chopped basil

Directions
1. Preheat oven to 350 degrees.
2. In saucepan, cook meatballs and sauce over medium heat.
3. Coat a 9×13 pan with non-stick cooking spray.
4. Spread raviolis evenly over the bottom of dish then ladle meatball sauce over the top.
5. Sprinkle with shredded cheese and cover with foil.
6. Bake for 20 minutes or until cheese melts. Garnish with basil.

Slow Cooker Pepper Steak

Ingredients
1 1/2 – 2 lbs. beef round steak
2 Tbsp. oil
1/4 C soy sauce
1 C chopped onion
1 clove garlic minced
1 tsp. sugar
1/4 tsp. pepper
1/4 tsp. ground ginger
1 can (16 oz.) diced tomatoes, undrained
2 large green peppers, cut into strips
cooked rice or noodles

Directions
1. Cut beef into 1″x3″ strips. In a skillet, brown round steak in oil until no longer pink.
2. Transfer beef into crock pot. Combine nest 8 ingredients and pour over meat in crock pot and stir.
3. Cook on low for 1 hour or until beef and peppers are tender. Serve over rice or noodles.

Ingredients
2 lb. ground beef
1 (46 oz.) can tomato juice
1 (29 oz.) tomato sauce
1 ( 15 OZ.) can red kidney beans, drained and rinsed
1 (15 oz.) can pinto beans, drained and rinsed
1 1/2 C onion, chopped
1/4 C bell pepper, chopped
1/8 tsp. cayenne pepper
1/ tsp. sugar
1/2 tsp. dried oregano
1/2 tsp. ground black pepper
1 tsp. salt
1 1/2 tsp. ground cumin
1/4 C chili powder

Directions
1. In a large deep skillet, brown ground beef : drain.
2. In a large pot over high heat, combine all of the ingredients Including browned ground beef,
3. Bring to a boil, then reduce heat to low. Simmer for 1 1/2 hours. Serve.
4. If using a crock pot, set on low, add ingredients and cook for 8-10 hours.
