Porcupine Meatballs

Ingredients

1 1/2 pound ground beef
1/2 C uncooked rice
2/3 C milk
1 Tbsp. minced onion or 1 medium onion chopped
1 1/2 tsp salt
1/4 tsp pepper
1 can condensed tomato soup
3/4 C water

Directions
1. Preheat oven to 350 degrees.
2. Combine beef, rice, milk, onion, salt and pepper.
3. Drop by rounded tablespoon full into a 9×13 pan. Combine soup and water and pour over meatballs.. Cover pan tightly with aluminum foil.
4. Bake for 1 hour. Serve with rice or noodles.

Ham Loaf 2

Ingredients
4 Tbsp. butter
3/4 C brown sugar
8 sliced pineapple
1 1/2 pounds smoked ham, ground
1/2 pound ground pork
2 Tbsp. finely chopped onion
2 Tbsp. finely chopped celery
1/4 tsp salt
2 tsp baking powder
1 C bread crumbs
1 C milk
2 eggs, beaten

Directions
1. Preheat oven to 350 degrees.
2. In a 2 quart casserole, melt butter and brown sugar. Place pineapple rings on top of the mixture.
3. In a large bowl, combine ham, pork, onion, celery, salt, baking powder, bread crumbs, milk and eggs. Place meat loaf on brown sugar mixture. Bake for one hour and when the loaf is nicely browned.

Baked Spaghetti

Ingredients
2 Tbsp. butter
1/4 C minced onion
1/2 pound ground beef
1/2 tsp salt
1/4 tsp pepper
1/4 tsp oregano
1/8 tsp garlic powder
1 (8 oz.) can tomato sauce
16 oz. spaghetti
8 oz. mozzarella

Directions
1. Preheat oven to 450 degrees. Grease a 2 quart casserole dish
2. In saucepan melt butter, add onion and ground beef; saute until onion is tender and beef is browned. Stir in salt, pepper, oregano, garlic powder and tomato sauce.
3. Cook spaghetti according to package directions and drain.
4. Place half of the spaghetti in prepared casserole dish. put a layer of half the cheese and then a layer of all the meat. Top with rest of spaghetti then rest of cheese.
5. Bake for 25-30 minutes.

Ribbon Salad

When I was living in Germany, I was very homesick and asked my Mom for some recipes. She sent me a 4×6 spiral bound notebook (which I still have, of course), half filled with recipes and I have put them all in here. Of course it had sugar cream pies, 3 of them! Divinity, fudge, chocolate drops, quick breads and more. This gelatin recipe is in the notebook and is really special to me. I was such a picky eater growing up and we always had huge family get togethers on both sides of the family. On the Hutchinson side, someone always made this at Christmas and I loved it because for one it is delicious, and two, it was something I would actually eat. The first time I made it in Germany, I waited until I was done with everything else before I started it, big mistake. With all the different Jello’s, this is a drawn out recipe. When I finally finished it at 3 a.m., I was near tears, Then I flipped the page over to read the last steps and read my Mom’s comment at the bottom. She wrote ” this takes a long time to make”. That made me laugh. That taught me to read a recipe all the way through before I started!

Ingredients
2 (3oz) pkg lime jello
5 C hot water
4 C cold water
1 (3 oz) lemon jello
1/2 C mini marshmallows
1 C pineapple juice
8 oz cream cheese
1 (1 pound 4 oz) can crushed pineapple
1 C heavy cream, whipped to stiff peaks
1 C mayonnaise
2 (3 oz) pkg cherry jello

Directions
1. Dissolve lime jello in 2 C hot water, add 2 C cold water. Pour into bundt pan. Chill till partially set.
2. In the top of a double boiler, dissolve lemon jello in 1 C hot water. Add marshmallows, stir to melt.
3. Remove from heat, add 1 cup pineapple juice and cream cheese. Beat till well blended and stir in crushed pineapple. Cool slightly and fold in whipped cream and mayonnaise. Chill till thickened and pour over mostly set lime layer.
4. Dissolve cherry jello in 2 C hot water, add 2 C cold water. Chill till syrupy. Pour over mostly set lemon jello layer. Chill till firm.

Lemon Velvet Glaze Cake

This was our brother Chris’ favorite cake. He requested it for his birthday every year. The name comes from the cake mix called Lemon Velvet, which is no longer available. Any lemon cake mix will do.

Ingredients
Cake
1 pkg lemon cake mix, preferably one with pudding in the mix
1 box lemon instant pudding mix
3/4 C oil
3/4 C oil
4 eggs

Glaze
2 C powdered sugar
2 tsp water
2 Tbsp melted butter
1/4 C lemon juice

Directions
1. Preheat oven to 350 degrees. Grease and flour a 9×13 pan.
2. Mix all the cake ingredients together. Beat for 2 minutes. Pour into prepared pan. Bake for 35-40 minutes.
3. While cake is baking prepare the glaze. Beat all glaze ingredients together.
4. Remove cake from oven and use a large meat fork and punch holes through the whole cake. Immediately pour glaze over hot cake.

Hungarian Coffee Cake

Ingredients
1/2 C sugar
1/2 C brown sugar
1/2 C butter
1 1/2 C flour
1/4 tsp salt
1/2 C buttermilk
1/2 tsp soda
1 tsp cinnamon

Directions
1. Preheat oven 350 degrees. Grease a 9×9 pan.
2. Cream both sugars and butter together. Stir in flour and salt. Set aside.
3. Stir the buttermilk and soda together
4, Divide creamed mixture in half. To one half, add the buttermilk mixture and mix well. Pour this half into the prepared pan. Sprinkle the other half over the top of the mixture in the pan. Sprinkle cinnamon over the top of everything.
5. Bake for 25 minutes

Banana Nut Bread

Ingredients
1 C brown sugar
1 C white sugar
1/2 C Crisco
2 eggs
3 large bananas, mashed
1 1/2 tsp baking soda
3/4 C sour milk
1/2 tsp salt
3 C flour
1/2 C chopped nuts, optional

Directions
1. Preheat oven to 350 degrees. Grease 2 loaf pans.
2. In a large bowl, cream together both sugars, shortening and eggs. Add bananas.
3. In a separate bowl, mix sour milk and baking soda till foamy and add to creamed mixture.
4. Whisk flour and salt together, mix into creamed mixture. Add nuts.
5. Pour into prepared pans and bake for 1 hour. Cool for 5-10 minutes; remove from pans. Let cool completely before slicing.

Pumpkin Bread

Ingredients
3 1/2 C flour
2 tsp baking soda
1 1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp ground cloves
3 C sugar
1 C oil
4 eggs
2 C pumpkin
2/3 C water
1 C chopped nuts, optional

Directions
1, Preheat oven to 350 degrees. Grease and flour 2 loaf pans.
2. Sift dry ingredients together in a large bowl, make a well in the center.
3. In a separate bowl combine, combine oil, eggs, pumpkin, water and nuts (if using). Pour into the well of the dry ingredient and mix will
